That's alotta Ricotta!


The process of making ricotta is a fairly simple one, but one that takes experience to do right. According to our guide, the cheese is now mostly made with more "figure-friendly" cow’s milk for mass production.

Trust me. That's a wolf in sheep's skin if I ever saw one. Cow's milk or sheep's milk. When ricotta looks THIS good--forget about figure-friendly.
